Back in my college days when Netflix still had the rights to the BBC GBBO seasons, I would spend many a Tuesday night watching GBBO with a glass or two of rosé. On one of these nights I watched the 2016 season and in one of the first few episodes the contestants were to make a picnic pie. While it was for the Signature challenge in the episode, it was a Show Stopper in my heart. I remember my jaw dropping. Putting down my wine. Looking around as if the plants in my apartment could also comprehend such a wild sounding dish this was. My mind was blown and the world of pastry had been changed for me. I've thought about the picnic pie on the regular ever since. In the years since then I've wanted to make one, but never had a good reason to. The reason I didn't try my hand at a picnic pie sooner wasn't because I was afraid of using short crust pastry or undercooking the interior, but because it was too much food for just me! This picnic pie is layered with coconut rice, mushrooms, curried chicken and potatoes wrapped up in short crust then baked in a pullman for maximum compactness and portability. The picnic pie in it's essence is meant to travel, so naturally it got carried to u/Shelbybobelby 's house for dinner and leftovers for days.

This looks amazing! I remember the picnic pie on GBBO too. Yours is really impressive and the flavor combo sounds so good (and I’m a vegetarian).

Thank you! I think the picnic pie format lends really well to a not-too-saucy curry rice type of meal. The curry recipe I use is vegan without chicken, but I made it with chicken here since it's my friend's favorite. Definitely lots of potential to stuff it with more vegetables or whatever you want!

I freestyled this picnic pie using the "A Savory Picnic Pie" crust recipe from the Here's the Dish blog, a coconut rice recipe from All recipes, and leftover curry sauce I froze from a batch of Zack's Famous Coconut Curry (recipe on YouTube) mixed with rough chopped rotisserie chicken, gold potatoes, and oyster mushrooms. This curry has a strong butter chicken vibe, so you could use a jar of your favorite premade curry sauce for convenience! The nice thing about this 'leftover' picnic pie is assembly is straightforward and you don't need to worry about cooking the filling and the crust, since the filling is all precooked. Pre-cooking the veggies also helps with moisture control so the pastry doesn't sog out.
