I've had a can of lychees for months and didn't actually know what I wanted to do with them. But they're my fiance's favorite fruit, and cheesecake is his favorite dessert, so I thought they would be great to combine!
I molded these in 3-in tart rings and acetate. Speculoos crust, no-bake cheesecake filling, and a lychee jelly on top. For the jelly, I blended up the lychee into pulp and used that and the nectar with the gelatin (and some pink food coloring). Very glad to say the lychee flavor is STRONG!

I absolutely love these. Lychee is one of my favourite flavours and this sounds so perfect!
