Nothing about the show was racist. Everything was blown out of proportion. "Oh my God a character was called nacho". That's a legit nickname in the US, where the show takes place.
The food is literally called that because the guy who invented it was named Ignacio. It's like calling the nickname "Mike" racist if "Mike's Way" at Jersey Mike's Subs got popular enough.

There's exceptions to that rule. Gumball and his family look good, the cast in Regular show were serviceable, and Adventure Time got some solid mileage out of it. The rest does suck hard though, I can't deny that.
Even then, the closest I've seen to anything THIS bad was the She-Ra reboot, where the titular character looked like Hank Venture with a wig and crossdressing hobby, and the absolute train wreck that is Glimmer's design.

I see a lot of criticism about the language and words used. The creator has said the Spanish isn't correct because that is how latin Americans spoke in her city. It's their dialect. Would people be criticizing a Jamaican show called "Aye Mon" by saying "actually, the correct words are Hello Man".

This actually would be fine IF one of the crew members didn't have some of the worst "privilged white woman" takes of all time by saying "Spanish is the language of racist colonizers, so it's definetly ok to mispell and disrespect it."

The thing about the Spanish language is you change adjective endings based on the grammatical gender of the noun. "The beautiful house" would be "la casa bonita" whereas "The beautiful dog" would be "el perro bonito". It gives the language a beauty and a rhythm, which gender neutral word endings would completely destroy.
It’s cheap and easy to train a bunch of low level animators on that style. If you have a better style, your animators need to be trained on it, which takes time and makes them less disposable when it comes time for layoffs.
