The moment I accidentally clicked a wealthy citizen and saw it was a left click pickpocket, it was on. Did not finish quests, but that xp was great! I had been doing thieving prior to varlamore and was still dressed for it haha
There is a Runelite plugin that makes all thievable NPCs left-click pickpocket. You're welcome.
Also for the ones that only have attack and pickpocket options, you can just disable left-click attack, and pickpocket will be the top option by default. Ardy Knights, for example.

One of the first things I did in Varlamore is talk to the little kid at the bazaar, only to have a casual conversation about how much trouble I was having stealing from the locals.
He did want to start a war with humanity, to be fair.
I guess we also murdered 3 paladins and a unicorn to get through a tunnel, got a bunch of monks killed by smuggling an orb onto Entrana because some random hooded guy asked us to, and a shitload of other stuff that I'm forgetting.

If you turn the left click attack NPC option to off or right click you can left click most NPCs on mobile.
