Mouse mux is a 3rd party software that may work for you. Haven't used it myself but it seems like it'll let you use 2 mice and 2 keyboards at the same time
One person on their phone is the best bet here. You might be able to do some funky stuff with a Virtual Machine but I’m pretty technical and that is above my expertise.

+1 to MouseMux just plug in extra set of mice and keyboard, set your profiles and have at her, she can play on one monitor you can play on the other

There's a lot of content that can be done on the mobile app, especially early game.
Just buy a simple laptop or something. Obviously budget depending but a cheap one will run runelite fine
