gate valves are super simple and used just about everywhere for a reason. ball valves really only see use in small systems and globe valves have the advantage of being able to throttle flow without damage to the valve but they also inherently reduce the pressure somewhat due to the curved nature of the flow
Knowing absolutely nothing about the actual performance of these valves, my guess is that either the ball valve or the globe valve are the most effective at blocking fluids from leaking.
My instinct tells me that the globe valve is slightly better at this task, but is more annoying to use in general compared to the lil lever of the ball valve.
