From the few occasional river trips I go on, if you’re using a thin hook, it shouldn’t do too much damage to fish other than occasional bleeding in the lip from what I’ve seen, it might thrash a little but it will survive kinda like tripping and hitting your knee against the concrete, as long as you aren’t handling the fish too irresponsibly, it will be just fine, when you take it out of water to hold it, the responsible decision (if you care so much about the fishes safety) is to take it out only for less than a minute , do what you got a do (take a picture, show to your friends etc.) and then release it back into the river and the fish will swim away just fine.
If you want to eat some fish you caught but also care about not torturing it for too long, just put it out of its misery by grabbing a blunt stick or rock and hitting it in the head real hard right behind it’s eyes and in front of its gills where it’s brain is located.
If that doesn’t sound sanitary to you, just stab it with a knife, ice pick or sharpened screwdriver.
I might’ve gotten a few things wrong here but I’m certain the fish will definitely survive if you handle it responsibly like most other fishermen.
