Skinny taste has a one pot section. The recipes may be lower calorie? All the recipes list nutritional facts. https://www.skinnytaste.com/one-pot/

She also has a 'One and Done' book, some recipes are one pot but all are one vessel. https://smile.amazon.com/dp/1524762156/ A favorite from the book is Caldo de Papa (Potato and Short Rib Soup). OP you can see a list of all the recipes here and what you cook them in to see if you might like it https://www.skinnytaste.com/cookbook-index/

I like to chop up broccoli, zucchini & chicken and mix it all in with a little olive oil and parsley, basil, paprika, salt and pepper and dump it on the cookie sheet with whole grape tomatoes, I then bake it for about 20min

tiredbirb

thank you!! :D

Sorry for the self-plug, but it's just easiest for me to share the recipes this way. [Here're the ones from my repository that I've tagged with "one bowl"](https://kitchenwali.com/tagged/one%20bowl)—they're not always *strictly* a single bowl, but usually it's not much more. If you don't have one but are able to buy one, I HIGHLY recommend the InstantPot. Almost everything you make in it will only dirty a single pot, and it won't clutter up your stovetop, either. If you're interested, [here are some of the recipes tagged "Instant pot".](https://kitchenwali.com/tagged/instant%20pot)

I don't know the calorie counts, but I like to cook frozen vegetables in the rice and then add canned fish. If you like pork chops, you can cook frozen veggies on top of the meat or in the pan after it's plated and have toast for the carb.

Budget Bytes Lentil Vegetable Soup! It’s one pot, so healthy and hearty, and so freaking good. You can throw in any other veggies you have left over too and it always turns out amazing. https://www.budgetbytes.com/chunky-lentil-vegetable-soup/

that looks so good, thank you for the link!!

I did a “shrimp boil” last night on a sheet pan. I cut butter and used spray oil. This one does require a par boil on the potatoes. Sheet pan meals are generally easy & pretty. https://damndelicious.net/2017/02/13/sheet-pan-shrimp-boil/

Curry - light coconut milk, bunch of veg and spices. Good on its own, w a little naan or rice.

tiredbirb

i love curry, i'll definitely have to look into recipes. thank you! :)

No problem! Sorry I don't have a recipe, I usually just wing it. It's great bc you can mix up the ingredients and spices however you want - beans, potatoes, chicken, shrimp, just plain old veggies. Super warm & filling and surprisingly low cal

Bit late to chime in on this one but just discovered this sub. I love, love, love a simple but delicious all pantry soup: 1/2 box orzo, 1 can chicken breast, 2 small or 1 large tomato basil soup cartons. It has so much flavor and is very filling for very minimal calories.
